Just wanted to let you know that the Quinoa Stuffed Acorn Squash recipe I made for the seder was a big hit, and not only with the vegetarians (who really enjoyed the Vegetarian 'Chicken' Soup).  Next year I think I'll switch to Spelt Matzah Balls for everyone - they were that good!

My wife and I have always liked to think that we are somewhat knowledgeable when it comes to nutrition and enjoy cooking and eating healthy meals.  However, when my wife became pregnant, she soon came to realize that cooking and eating was a frustrating experience.  As morning sickness morphed into afternoon, evening, night-time and pretty much every-other-time sickness, her food aversions were so severe that all she could stomach was toast and crackers.  Our concern was that she and the babies (yes, twins) were not getting the nutrition they required.  No matter what we tried, she invariably ended up running to the bathroom.

Aviva helped us by identifying certain foods, and food combinations, that were easy on her stomach while giving her the required nutrition.  She spoke to us about supplementing and was able to recommend good quality supplements that my wife was willing and able to take.  Perhaps most importantly, she put our minds to rest about the nutritional issues for the babies.

My wife was soon back to eating healthy meals and we could focus our attention on other matters.  Not having to worry about the nutritional value and quality of the food you are eating is a big relief and we thank Aviva for helping us in this important time.

Last April, my husband went to see Aviva because he was not feeling so well.  He had low energy and high stress. She discovered through her evaluation of him that he was addicted to caffeine- a fact of which even I was not aware. After sticking to a strict non-caffeine diet, he soon emerged with tons of energy and a brighter disposition.  I was thoroughly impressed and decided to give her a try as well.

I went to see Aviva, and listened to her suggestions for supplements and eating better.  She also asked me to have a cholesterol test done to see where those numbers stood.  I immediately took the supplements and felt as though my body was now whole rather than a sum of parts; however I did not really apply the ideas she gave me for food.

A month later, I saw her again so that we could go over the results of the cholesterol test. I was truly surprised to find out that at some point over the last five years I had developed high bad cholesterol. Finally, I decided to take on Aviva’s suggestions for food.

At the same time all of this was happening, I was also trying to lose some extra weight I had gained the year before while pregnant.  No matter what I was doing, I still had fifteen pounds to go. Purely a positive by-product, once I applied Aviva’s food suggestions,  I lost seven pounds in one week. I never felt hungry or that I was cheating myself of great food. It now seemed crazy that I was fighting it for so long! I felt good… balanced!

During my initial consultation with Aviva Allen, she spent the majority of the time learning about my nutrition and health goals. Not only did she ask me about my current eating/nutritional habits, but also my overall health, which I very much appreciated.

Rather than focus on things that I shouldn’t eat, Aviva focused on giving me recommendations on healthy meal and snack choices that I could include more of in my diet.  She took the time to explain likely reasons why I was falling short on some of my nutrition and health goals.  Aviva also recommended some nutritional supplements and patiently explained why she was recommending them, how they would benefit me, how often I should take them and how to properly store them.

By the time we had our follow up consultation about four weeks later, I had experienced a noticeable improvement in all areas of my initial nutrition and health goals despite my personal challenges with self-discipline in this area.   Aviva then recommended a few more minor adjustments to help tailor my program to better fit my busy lifestyle. Since that follow up consultation and the minor program adjustments, however, I have been more disciplined with her recommendations and still continue to see noticeable progress toward my initial goals.

For as long as I can remember, I have always had such a passion and desire for food. You just can’t beat a hearty cheeseburger surrounded by crispy French fries or the sweet taste of pizza- the whole pizza for that matter- while watching the big game. I could keep going, but my love for and dependency on food goes deep and with me glued to the computer for fifteen hours a day, my body and my health has certainly taken a beating.

I figured that if I just go for the low fat, or the fat free foods, I’ll lose some weight, be healthy and have killer abs- okay, maybe not the abs.  But it’s more than that and listening to Aviva Allen on a weekly basis preach the healthier lifestyle, I decided I had to act.  She opened my eyes to a whole other world out there… a world without trans fats, French fries and diet coke (yes this place does exist).

It didn’t take long after my first few visits that I immediately noticed changes in my own health, weight, and stamina. Thank you, Aviva! I saw Aviva Allen to address some digestion concerns as well as to learn how to eat healthier, and I couldn’t be happier with the result so far! My experience with Aviva’s services began with a very pleasant yet thorough initial consultation. After gathering all the necessary information, Aviva made several recommendations including: Supplements I should and shouldn’t be taking, dietary recommendations including healthy recipes I should try and foods to avoid and suggestions on ways to maintain a healthy weight.

To say that Aviva’s recommendations have totally changed what I eat would not be an understatement. Using the delicious, yet healthy recipes Aviva recommended, I’ve almost completely replaced the salty foods in my diet with more wholesome alternatives.  My absolute favourites so far have been the Mayo-less Chicken Salad and the Creamy Bean Salad.
